chewy chocolate chip cookies

Everyone should have one fallback cookie recipe that keeps cookie jars stocked or just one classic recipe that finding out the recipe is a carefully guarded family secret: that’s how good they are. For me, it didn’t take much to find out the Orthodox Gentleman’s favorite cookie recipe. It is classic chocolate chip. I’m not too surprised at all.

You can tell a lot about a person’s personality by their favorite cookie…or ice cream flavor…but let’s stay on topic. And yes, I believe that. Chocolate chip lovers have simple, unrefined tastes and prefer to live uncomplicated lives. Every time I make them, I can see a younger version of the Orthodox Gentleman enjoying homemade cookies dunked in milk that his momma or grandma made for him. Technically, if we’re going back that far, the Orthodox Gentleman also hints a love for Chips Ahoy cookies. So, I try to make my own cookies just as thick and chewy and golden brown. I haven’t had Chips Ahoy in years, by the way. 

And what’s even better is that they are also vegan. 
Chewy Chocolate Chip Cookies

1/2 cup of coconut oil 

1/2 cup of brown sugar 

Ener-G brand egg replacer (in place of an egg)

1 tsp of baking soda 

1 and 1/2 cup of flour 

1/4 tsp sea salt 

1 tsp vanilla extract 

1/2 cup of Enjoy Life nondairy sweetened chocolate chips
